Sausage Ball Recipe

- 1 lb sausage (in the tube...ick). I use hot and spicy but there are all sorts of others like sage, country, Italian.
- 1.5 cups Bisquick or something similar (but not pancake mix)
- 1 cup shredded Cheddar (I use extra sharp, but it can be mixed with other favs like Swiss, Gouda, etc...I've done that before and it's excellent. Some cheeses like Monteray or Gouda make it a bit creamier)

Preheat oven to 375. or 400, depending on how late you are getting these in the oven in time for the soirre!

Mix it all together well. Squish it through your fingers. It's fun, really. Main thing to notice (after you clean your hands)---> If you plunge your finger in the giant ball, it doesn't come back covered with ick. (not too sticky)...conversely, if it looks dry or crumbly, add more sausage and cheese. You want to be able to form a good solid ball that is neither sticky nor dry.

Roll in small balls. Or roll out and cut out with heart cookie cutters...(you know...it's a contradiction because this is oh, so NOT heart healthy) Bake until done, about 15-20 minutes (depends on the size of the ball).

Delish with a tangy/spicy buttermilk dip. Or Beer. Uh...or BOTH.

Warm Little Sweetness

I must admit that I have become quite fond of making little bitty sweaters.   It all started on a recent trek to India traveling for business. I needed to carry just enough yarn to keep my busy bee hands occupied during the evenings in my hotel room. I had just the perfect little buttons to add!
